A night of making pizza, tasting wine and lots of fun

We will give you the opportunity to learn how to make authentic Neopolitan pizza. First introduced to the world in the late 19th century and still being enjoyed and recognized as one of Italy’s treasured culinary delicacies, this pizza is truly one of the masterpieces of our Neapolitan heritage.

We will teach you how to prepare the pizza dough along with a variety of toppings to make this thin crust pizza all the more delicious! There is no secret that the best Pizza is the one baked in wood-fired brick ovens, a tradition that is respected and maintained to this day. However we will show you ways to cook a very good pizza in your home oven.

Once you learn the secrets of how to prepare a good and crispy pizza crust and cook it in your own oven, we are certain that you will want to organize your own Italian pizza party for friends and family when you return home!

First step: We will tell you about our training and certification as well as a history of our pizzeria. You will learn about our wood-fired oven it's history and it's function. We will explained how we prepare the oven, which woods are used and when the correct temperature is reached for the baking, then we talk about your home oven.

Second step: You will learn the proper preparation of the pizza dough, the correct way to make it and also how to manipulate it to make the perfect pizza shape and crust. It will be explained to you the type of flour, yeast, rising times, acidity levels etc.

Third step: The original toppings used in the Neapolitan culture, as well as the secret of real genuine natural tomato sauce and mozzarella used only with fresh basil for the famous Margherita pizza art.

Fourth step: The correct working method to handle pizza in our wood fire oven, and how to achieve a good pizza in your home oven.

The Course focus on the following topics:

A knowledge of the physiological, morphological and genetic components of the products composing the Neapolitan pizza (flour, plum tomatoes, extra-virgin olive oil, buffalo and cow’s milk mozzarella).
We will teach these five essential concepts:
1) History of pizza and an introduction to the Neapolitan pizza.
2) Ingredients characteristics and quantity for the production of the pizza dough (flour, yeast, water, salt).
3) Equipment: mixer, wood burning oven characteristic, preparation table, pizza peels (wood & stainless steel), oil pitchers, etc .
4) Ingredients for making a Neapolitan pizza e.g., San Marzano plum tomato, Extra virgin olive oil, buffalo and cow’s milk mozzarella, basil, oregano, garlic etc..
5) Preparation of the pizza (dough spreading and placement of the toppings)
6) Cooking of the pizza (temperature, timing and equipment)

We will go over what it takes to make fresh mozzarella.

We will then gather make pizza, share our creations with the other students and enjoy some nice Italian wine.

Our promise is that at the end of the class the students will learn the basic knowledge of how to cook delicious pizza at home and its importance in our cuisine, as well as a complete range of pizza toppings, and how to create the original pizza taste and crust.

The main goal of this program is reaching the right confidence into the students skills, relax, velocity and concentration in manipulating the dough, shaping it, dressing, and cooking it.

But most important ! The goal of this course is to have fun and learn to make pizza!

Each student will be given a recipe guide, a bag of 00 flour, a can of San Marzano tomatoes as well as a sampling of fresh mozzarella to take home with them.

Class size is limited - the minimum is 6 and the maximum numbers of students allowed per class is 10. You must be 18 or older to attend. Cost is $225.00 per student
