Why Don't You Do Table Service?

We greet our customers when they enter, give them a chance to sit down, look over our extensive menu, answer any questions they might have and then ask them to come to the front counter to order. We do this to allow our guest to enjoy their food and their guests. Most servers work for tips and are paid a very low wage, so inorder to make money they need to turn a table quickly. We don't agree with this and all of our people are paid at minimum wage or higher, so our guest can sit and enjoy themselves for as long as they like.

Do you serve Calzones, Stromboli & Sandwiches?

YES! However these items are served during our lunch hours which run from Tuesday through Friday 11:00am to 2:30pm.



Why are some of the pizzas uncut?

Napoli pizza is generally a knife and fork pizza it comes uncut. It's a little weird to Americans at first, and you might think it's a mistake. But remember Napoli pizza has a wet center! If you leave the pizza uncut until it's at the table, the soupy part stays on top until the customer cuts the pie. And that ensures that the crust doesn't get soggy on the way from the pizza oven to the table

Why is my pizza 'wet' or 'soupy'?

If you've truly never had this style of pizza, prepare yourself for the fact that it might be what you would term "soggy." The liquid from the sauce and moisture excreted from the fresh mozzarella tend to create a hot, soupy, molten area at the center of the pizza.

Neapolitans like their pizzas with this "wet" center. You'll have to use a knife and fork.

"Why can't they just make it crisper?" you ask. A Neapolitan would counter with, "Why can't you just eat it as is?" (And that would be the polite response. ;)



Why do you limit the number of toppings?

Our dough is very light and thin, credit card thin. With this in mind each pizza can only hold so much weight before it tears. So our pies are topped accordingly as in Napoli. You'll actually see sauce through the cheese! We try to strike a careful balance among crust, sauce, and cheese. With not too much of any one component. Most folks love being able to taste all 3 components.

Do you sell by the slice?

Short answer NO! Slices are nothing more than a reheated leftover. Sliced pizza is parcooked then additional topping are applied when ordered and reheated. We make our pizzas fresh to order and offer a small personal size if your not very hungry. Our pizzas cook very quickly in about as much time to reheat a slice and you can be out very quickly depending on how busy we are.
